FIOR DI LATTE
Il Fior di latte mozzarella is the product most used by pizza chefs on the traditional Neapolitan pizza. When correctly balanced, its characteristic consistency, moistness, and fat content make it an ideal product to be baked in wood or electric ovens.
Pizza chefs cut it into cubes or julienne strips and let it drain for a few minutes before using it on the pizza.
When it is made softer and more milky, it is the ideal accompaniment to vegetables, salads, and cured meat. It is perfect for fresh, local dishes, such as the traditional Caprese salad, as it combines perfectly with all varieties of tomatoes from Campania.
